I love prepping these for my breakfast during the week. Just pop it in the microwave for 30 seconds. You can always reheat in a toaster oven at 350 degrees F for 5-10 minutes.

Bacon, Egg & Cheese Pastry Cups
Servings: 9
Ingredients
- 1 sheet puff pastry
- 4 eggs
- 1/4 cup milk
- 1 pkg bacon
- 1/2 cup shredded cheese
- salt & pepper to taste
Instructions
- Layout the pastry puff and thaw according to the package directions.
- Cut up your bacon, cook, and place the cooked bacon bits on plate with a paper towel to drain off the grease.
- Preheat the oven to 400° F. Grease a muffin tin and set aside.
- Once the pastry puff sheet has thawed unfold and cut into 9 squares. Gently pull each square and stretch, before pressing the dough into the bottom of each muffin cup.
- Fill each of the cups equally with cheese and bacon.
- In a small bowl, beat 4 eggs and 1/4 cup of milk. Salt and pepper to your liking. Pour this mix evenly over each cup.
- Bake in the oven for 15-20 minutes, until golden brown. Remove from the oven and allow the cups to cool for 5-10 minutes before serving.
