Bacon, Egg & Cheese Pastry Cups

I love prepping these for my breakfast during the week. Just pop it in the microwave for 30 seconds. You can always reheat in a toaster oven at 350 degrees F for 5-10 minutes.

Bacon, Egg & Cheese Pastry Cups

Ingredients

  • 1 sheet puff pastry
  • 4 eggs
  • 1/4 cup milk
  • 1 pkg bacon
  • 1/2 cup shredded cheese
  • salt & pepper to taste

Instructions

  • Layout the pastry puff and thaw according to the package directions.
  • Cut up your bacon, cook, and place the cooked bacon bits on plate with a paper towel to drain off the grease.
  • Preheat the oven to 400° F. Grease a muffin tin and set aside.
  • Once the pastry puff sheet has thawed unfold and cut into 9 squares. Gently pull each square and stretch, before pressing the dough into the bottom of each muffin cup.
  • Fill each of the cups equally with cheese and bacon.
  • In a small bowl, beat 4 eggs and 1/4 cup of milk. Salt and pepper to your liking. Pour this mix evenly over each cup.
  • Bake in the oven for 15-20 minutes, until golden brown. Remove from the oven and allow the cups to cool for 5-10 minutes before serving.
