Spicy Honey Garlic Chicken

We thought this recipe was a hit. I made a few flavor changes and doubled the sauce ingredients. The extra sauce was perfect for pouring over the rice. If you don’t like a lot of extra sauce, then you may want to cut the sauce ingredients in half on the recipe card. Either way, the chicken always turns out juicy.

When it’s time to transfer the chicken to the skillet to sear the outside, you don’t have to use a cast iron pan. It’s just my go-to when cooking and needing to do a quick sear. I’ve used a non-stick skillet to just brown the outside of the chicken and it still turned out well.

This recipe is great for portioning out for your weekly lunch meals. The chicken reheats well and can be paired with whatever sides you want. Give it try and let us know what you think in the comments!

Spicy Honey Garlic Chicken

Equipment

  • 1 9×13 Glass Baking Dish
  • 1 medium size sauce pan
  • 1 skillet – I use my cast iron with a 1 inch side

Ingredients

  • 6 boneless chicken thighs
  • 2 tbsp butter
  • 6 cloves of garlic
  • 1/2 cup chicken stock
  • 1/2 cup honey
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp red pepper flakes
  • 2 tbsp parsley
  • 2 tbsp oil

Instructions

  • Preheat oven to 350 degrees F.
  • Add chicken to the 9×13 greased glass baking dish and toss in the oven and set a timer for 5 minutes.
  • In a medium size sauce pan melt butter. Once the butter has melted add the minced garlic and fry for a minute. Pull off heat and add all the following: chicken stock, honey, soy sauce, vinegar, red pepper flakes, and parsley
  • Add the sauce pan back to the stove over low-medium flame for 5 minutes until the sauce thickens. Remove from heat and pour over the chicken that is cooking in the oven. Let the chicken continue cooking another 25 minutes or until chicken reaches an internal temperature of 165 degrees F.
  • **Here is a good place to start up any sides, like rice or broccoli.
  • Once the chicken is cooked, start up your skillet / cast iron with 2 tablespoons of oil.
  • Use your tongs or a fork to sear each side of the chicken and serve. Please ensure your chicken is fully cooked before serving and should reach an internal temperature of 165 degrees F.
