Poor Man’s French Toast

I call this “Poor Man’s French Toast, because I am not going to go out of my way to buy some fancy bread to make French Toast. If you want to use better bread more power to ya! I used the same bread we buy for sandwiches. Super easy and super quick!

This may sound crazy, but I do toast the bread prior to cooking it in the skillet. I have found when I skip the toaster the toast is a little mushy. Like I say in the recipe, just do it on a low setting. Below are some photos I took throughout my cooking process.

Once the French Toast was ready, I topped ours with a little bit of power sugar and maple syrup. You can always top these with fruit or serve with some bacon and eggs, but as my mama would say, “This isn’t an IHOP.”

Poor Man’s French Toast

Equipment

  • large 12 inch skillet
  • shallow container/bowl

Ingredients

  • 4 slices of bread (dried)
  • 3 large eggs
  • 2 tbsp milk
  • 1/2 tsp vanilla
  • 2 tbsp butter
  • cinnamon/sugar

Instructions

  • Toast the bread in the toaster on the lowest setting. (Only do this if the bread is soft or is a recently purchased loaf)
  • Whisk together the eggs, milk, and vanilla in a shallow bowl. I used one of our food storage containers.
  • Heat butter in skillet over medium heat.
  • Once the skillet is hot, coat eat side of the toast/bread with the egg mix.
  • Place coated bread in skillet (I usually cook 2 at a time) and sprinkle with cinnamon/sugar (optional)
  • You'll want to cook the bread in hot skillet until browned completely, 2 to 3 minutes per side.
  • Once ready serve hot with your favorite toppings!

Notes

During the cooking process I continue to add butter to the pan as needed. I think this help make the edges a little more caramelized. 
This is not a dish I would leave unattended. Depending on your stove the toast could cook faster or slower. It’s good to keep a watch on it.
